What you’ll need: 5 lbs of Pork Belly (skinless) OR 5 lbs of Beef Brisket, FLAT (not the whole Brisket, just the Flat full fat, ask your butcher), extra large freezer bags, wood chips (apple, cherry, hickory).
Both profiles come in 300gm packages and are specifically designed as one-use only. 300 grams of the Bacon Cure (K & R) are intended to be used on 5lbs of either pork belly or beef brisket (flat). Depending on how thick you slice your finished product will affect how many servings you derive.
